Here’s an alternative to Fried Cabbage when the crop is over-abundant!

 

Kielbasa Cabbage Skillet

 

1 lb fully cooked kielbasa or Polish sausage, cut into cubes

1 large head of cabbage, coarsely chopped

2 medium onions, chopped

4 medium potatoes, peeled and cubed

3 cups tomato sauce or homemade salsa

˝ cup sugar

1 TBLSP paprika

 

In a large skillet, brown sausage in 2 tablespoons of oleo; remove and set aside.

In same pan, sauté cabbage and onion in 2 tablespoons of oleo until onions are tender.

Add tomato sauce, sugar and paprika to cabbage.  Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

Add potatoes and sausage.

Cover and simmer for 45 minutes until potatoes are tender.
