Zucchini is a good first vegetable, but it seems like the plant will never stop producing! This recipe is good when the rest of the garden begins its annual over production! You can use about any fresh vegetables that are available - the more variety, the better! This freezes very well and is a fun reminder of summer on those cold winter nights.

 

Zucchini Vegetable Casserole

 

1/2 pound bacon (cut into small pieces)

1-2 onions, chopped

 

Fry bacon and onions together in large frying pan

 

Add sliced zucchini (unpeeled) to completely fill fry pan. Cover and cook at medium temperature, stirring occasionally. Caution, the zucchini will make a large amount of liquid.

 

Add the following:

Diced tomatoes (I use 3-4 large ones)

Fresh corn cut off the cob (5-8 are not too many)

Diced green peppers

Garlic (1 tsp powder)

Fresh spices (chopped) - Summer savory, Lemon Basil & Lemon Balm make a great blend

 

Stir and cook at a medium low heat until all of liquid is gone - it make take 2 hours.

 

Makes 3-4 quarts of casserole.

 

Reheat frozen casserole in a fry pan to help reduce liquid.
