Here is another use for that overzealous zucchini plant – especially good for the chocolate lovers!

 

Zucchini Chocolate Cake

 

Mix together:

½ Cup margarine                      ½ Cup vegetable oil

1 ¾ Cups sugar                        2 eggs

1 tsp vanilla

 

Add to above:

2 ½ Cups flour                         ½ tsp baking powder

1 tsp soda                                ¼ Cup baking cocoa

½ tsp cinnamon                        ½ tsp cloves

½ Cup sour milk*

 

Stir in:

2 Cups fine grated peeled zucchini

 

Pour into a greased 13x9 loaf pan. 

 

Sprinkle on top:

½ Cup chocolate chips

 

Bake 45 minutes at 350 degrees.  Cool on a wire rack.

 

If desired, dust top lightly with confectioners sugar.

 

*Note:  To sour milk, place 1 ½ tsp white vinegar in a measuring cup.  Add milk to equal ½ Cup.
