It seems as if my zucchini plants either wither and die or over produce!  There are only so many uses for a zucchini, but this one is always a treat.  I bake them up and freeze the loaves for company or a winter delight.  You can also just freeze the grated zucchini and bake them fresh (but drain it well).

 

Zucchini Bread

 

Mix together:

6 eggs                                      4 Cups sugar

2 Cups salad oil                        2 Tbl vanilla

 

Stir in:

4 Cups fine grated zucchini (do not peel)

 

Add to above:

6 Cups flour                             1 tsp baking powder

2 tsp soda                                2 rounded Tbl cinnamon

1 tsp salt

 

Grease and flour 3 loaf pans (8x5).  Bake 75 minutes at 350 degrees; remove immediately from pans.
