Ever wonder what to make with those abundant crooked neck summer squash?  This easy microwave recipe is a great way to welcome those early summer days!  Add more or less summer squash, depending upon your garden output!

 

Summer Squash Casserole

 

¼ Cup margarine

3 Cups sliced summer squash

1 head fresh broccoli (or frozen)

2 eggs

1 Cup shredded cheese

½ Cup milk

1 tsp salt

½ tsp dried mustard

 

Place summer squash, broccoli and margarine in microwave dish, cover, and cook on HIGH for 12-15 minutes (until summer squash is tender).  Drain liquid from casserole.

 

Beat egg, milk, salt & mustard in small mixing bowl.  Add cheese. 

 

Add cheese mixture to casserole, stir together well and cook on HIGH for another 5-6 minutes.
