India’s Lentil Soup

3 Tbl Olive Oil

2 Medium Onions, chopped

2 Cloves Garlic, minced

3 tsp Ground Cumin

2 tsp Tumeric

½ tsp Cayenne Pepper

2 Tbl Ground Coriander

2 Cups Red Lentils, rinsed

8 Cups Water

1 Pint Whole Roma Tomatoes, chopped

1 ½ Cup Potatoes, chopped

1 Cup Carrots, chopped

2 tsp Salt

Pepper to taste

 

In a large pot, heat oil and add onions and garlic.  Cook for 5 minutes.

 

Stir in spices, lentils and water.  Bring to a boil, reduce heat and simmer (partly covered) for 15 minutes.

 

Add vegetables and simmer, covered, for 20 minutes, stirring occasionally.  Add salt and pepper to taste.
